Farm-to-Flask Mixology Class

Let resident experts in the art of mixing cocktails show you how to combine our farm fresh ingredients with an array of Caribbean rums or local spirits. This experience includes a shot of each Copalli Rum and a signature cocktail in the new Copalli Tasting Room. Of course, youʼll be drinking all of the cocktails you learn to make!
Farm-to-Flask Rum Distillery Immersion
Duration: 2.5 HRS
You will be guided through the sugarcane rum-making process of Copalli Rum. Crafted with passion and sustainability at its core, Copalli Rum is made with just three ingredients — non-GMO heirloom sugarcane, pure rainforest canopy water, and organic yeast — sourced from 22,000 acres of pristine rainforest in Belize. From farm to flask, youʼll experience each step of making single-origin sugarcane rum and learn what makes it unique. Start by touring the organic cane fields and harvesting your own sugarcane, before heading to the on-site distillery to learn the basics of rum-making and its evolution over time. Tour the entire distillery and bottling facility before traveling to the Agricultural Center. Here, experts at Copal Tree Lodge will teach you how to taste spirits correctly and the science behind the practice.
Seed-to-Cup Coffee Cupping
Duration: 1 HR
Join us at our coffee bar for an in-depth coffee tasting, or “cupping”. The most important measure of coffee quality is flavor and we have sourced the best Central America has to offer. The main aim in cupping is to evaluate the coffee objectively and to create a flavor profile based on an established terminology. The basic attributes evaluated are: aroma, flavor, body and acidity. Your cupping journey will be led by our resident coffee expert.
Bean-to-Bar Chocolate Making
Duration: 2.5 HRS
The Bean to Bar Chocolate Class offers visitors a very unique opportunity to understand and participate in the entire process of transforming high-quality organic cacao into chocolate. The day starts with a visit to the cacao nursery where you will see cacao seeds sprouting and watch our expert hand grafters hard at work grafting rare, indigenous criollo cacao onto heartier high yielding varieties. Then, youʼll crack open a pod to taste the fresh cacao fruit. Youʼll learn about the fermenting and drying process, walk through our Garden of Exotic Flavors, and return to the farm centre where weʼll roast some cacao and youʼll see our universal concher churning out smooth, velvety chocolate liquor. Then, roll up your sleeves and don an apron as our instructor guides you through tempering, both by hand and machine, and moulding your own chocolate bar to take home.

Learn to make chocolate in the Bean-to-Bar tour in the fully equipped Chocolate Workshop. Learn the art of coffee roasting and cupping with the Seed-to-Cup Coffee Cupping Class. Learn the history of rum and craft your own jungle cocktails with the Farm-to-Flask Mixology Class and Rum Distillery Immersion or Jungle Farm Tour. This tour can be done in multiple days throughout your vacation.
Lubaantun Ruins, Blue Creek, & Cave Swim

The Belize Zoo and Tropical Education Center, which gives you the unique opportunity of viewing Belizeʼs prolific wildlife in one location. A sanctuary for the countryʼs indigenous species, the Belize Zoo was first created for animals that were injured, orphaned, rescued, rehabilitated or donated to the facility and which could not be returned to the wild. The Belize Zoo is now home to over 150 animals, representing over 45 species, including an impressive array of large cats, primates, reptiles and birds who reside beneath the forest canopy in natural settings.
Nim Li Punit Ruins & Rio Blanco Waterfalls
Duration: 6.5 HRS
Dating from the Maya Classic Period and flourishing from the 5th century to 8th century AD, the Nim Li Punit site derives its modern name from the elaborate headdress depicted on one of the largest stela found in the Maya world. After touring the site, you will enjoy a traditional Belizean lunch at Colemanʼs Café. Following lunch, the tour proceeds along the route of the new Pan American Highway to Rio Blanco Waterfalls Park. Swim in the cool refreshing water, cliff jump, or just relax and enjoy the view.
Maya Ruin & Village Adventure
Duration: 2.5 HRS
Pass through several local villages on your way to ancient Maya Sites (choice of Lubaantun or Nim Li Punit). This is a half-day tour and you can either choose to stop at Colemanʼs Café for some local cuisine, bring a packed lunch or head back to the Lodge for lunch prepared by our culinary team.
Punta Gorda Town & Market Tour
Duration: 2 HRS
Market days offer a great opportunity to immerse yourself in the regionʼs kaleidoscope of people, fruits, vegetables, spices, and fish. Villagers and fisherpeople converge on the otherwise sleepy coastal town in school buses and boats laden with the bounty of the bay and rainforest farms. In many ways, the scene is reminiscent of ancient Mayan Markets.
Horseback Riding
Duration: 1 - 2 HRS
Have an experienced rider and cowboy, that leads our Horse Rides on the trails throughout our unique tropical rain forests, cacao plantations and sugarcane fields. Wending through the cacao plantations and jungle, you can catch glimpses of the Rio Grande. Giant fig, ceiba, and gumbo-limbo trees form the primary canopy, while the massive cohune palms are used for thatch and tasty palm heart cabbage grow in dense stands. Howler monkeys, parrots, and toucans are often spotted on the trails. Your guide might even be able to show you jaguar, puma, and tapir tracks. These animals, while not often seen, leave paw imprints in the soft jungle soil. Our horses Jim, Pinto, Queen, and Max are very calm and know the trails very well. No riding experience is necessary.
San Antonio Waterfall

Spend the afternoon cooling off in the blue waters of the San Antonio Waterfall, a 45 minute ride from Copal Tree Lodge. Climb and relax on large boulders in the shallow pool below the waterfall, which cascades over moss-covered limestone rock.

Guided Jungle River Canoeing & Kayaking

The perfect way to spend an afternoon on the river. Youʼll experience wildlife unseen in other parts of the world—from toucans to playful monkeys. Silently paddling along past lush jungle riverbanks, the feeling is complete immersion in nature. Guided kayak tours can be arranged for novices or experts, and our guides are well-versed in the flora, fauna and history of the area.

Perched above the Rio Grande and just a short boat ride from the Caribbean Sea. Cast for tarpon and snook on the rivers and in the mangroves, spend the day fishing the flats for permit—or head out to the white sand beaches of the Sapodilla Cayes for bonefish. The majority of our fishing takes place in protected marine reserves and national parks. Southern Belize is best known as a world-renowned permit territory—and, while most anglers who visit the region are intermediate to advanced, our experts are also happy to guide beginners for a one-of-a-kind fly fishing experience.
River Fishing

Perched on the Rio Grande River, providing the perfect location for a casual river fishing trip. Our tour begins at the Lodge, as we spend the next three hours winding our way down the river—home of tarpon, snook, snapper, jacks, and other indigenous species. Deep in the jungle, you may catch glimpses of howler monkey troops and stealthy crocodiles. Families and semi-serious conventional anglers will find our river fishing trips ideal for connecting with nature—exploring the Belizean jungle under the watchful eye of our local captain. For more experienced and dedicated anglers, we recommend a fly fishing trip.
Snorkel with the Chef

Copal Tree Lodge has a delicious new adventure you donʼt want to miss. This guided day cruise to the Gulf of Honduras takes place on our quiet, comfy boat with seating for 8-12. Weʼll start from the dock in the morning and proceed down the river to one of our local Cayes, where youʼll enjoy snorkeling in the warm, clear Caribbean Sea. Youʼll see an impressive array of sea life and coral while the crew dives for conch, lobster, crab, and possibly lionfish, an invasive species we eradicate by eating! After snorkeling, your crew will mix you a cold beverage on a nearby caye. Toast to the good life while one of our talented cooks prepares an incredible lunch featuring the catch of the day.
